Simankh Dana has non-volatile metabolites, and little is known about its volatile makeup. We report on volatile profiling from three accessions of various origins, including Palestine, Jordan, and Egypt, along with its cold tea and post roasting through headspace solid-phase micro extraction (SPME), in an effort to further the flavor profile of sumac and its food products.
